Lone Star Smoke Beef & Potatoes

My Lone Star Smoke Beef & Potatoes is an easy hearty meal for two that is perfect on a cold night.
Ingredients:
1 lb of Denver cut steak (Denver cut is a fairly inexpensive cut, but it has great marbling that will render during the cook, keeping the meat juicy.)
1 lb of Baby Yukon Gold potatoes
1 large sweet onion
1 package of sliced mushrooms (optional)
2 TBSP of butter
2 TBSP Nate's Smokehouse BBQ Blends Lone Star Smoke
Directions:
- Cut steak into 1 inch cubes and sprinkle on 1 TBS of Lone Star Smoke. Make sure all the pieces of meat are covered in spices and let sit for at least 30 minutes.
- Cut potatoes into 1 inch cubes and place into microwave safe dish. Microwave for about 5 minutes, just long enough to soften up the insides.
- Quarter the onion and cut into bite size pieces.
- After the meat has had a chance to "marinate", sear it in a large skillet over medium high heat with a little bit of olive oil. (Cast iron preferred.)
- Remove meat once it is seared on all sides, remove it and set it aside.
- Add butter, potatoes, and onions to skillet and add remaining Lone Star Smoke. (I tend to add more, but you can adjust it to your taste.)
Cook until potatoes are getting crispy and onions are getting soft, then add the meat back in.
- Cook for about 5 more minutes, stirring occasionally until a few pieces of meat measure about 145 degrees internal.
- Serve with your favorite vegetable on the side. (Mine happens to be green beans.)
