Lone Star Smoke Chicken Fajitas

The cumin and other spices in Lone Star Smoke makes it a perfect substitute for fajita seasoning.

Ingredients:
1 1/2 lbs of chicken breast
1 large or 2 small yellow or white onions
2 bell peppers (I prefer red, yellow, or orange)
2 cloves of garlic, minced
1 package of mushrooms (optional)
2 TBSP of olive oil 
2 TBSP of Lone Star Smoke (plus more to taste)

 

Directions:

  • Place chicken breasts on cutting board, cover with plastic wrap and pound flat.
  • Cut chicken into thin strips.
  • Put strips into a large bowl and sprinkle with 1 TBSP of Lone Star Smoke. Mix thoroughly until all pieces are seasoned.

  • Cover with plastic wrap and let it sit in the fridge for at least 30 minutes to take on as much of the flavor as possible.
  • While chicken is marinating cut onions and peppers into thin strips.
  • Place onions and peppers into another large bowl and sprinkle on the other TBSP of Lone Star Smoke. Like the chicken, mix until they are thoroughly coated.

  • Preheat cast iron skillet on medium-high for about 10 minutes.
  • Add the olive oil and vegetables.  Cook for about 2-3 minutes until the vegetables are soft.

  • Add chicken and cook about 5 minutes or until chicken is no longer pink in the middle.

  • Before serving, you can sprinkle on a little more Lone Star Smoke to taste.
  • Serve with warm tortillas.

This recipe serves 5-6, so it's perfect for an easy meal for a big family.  To get that restaurant sizzle when you bring it to the table, be sure you use cast iron and be sure the skillet is piping hot.  It also helps to have a squeeze bottle of olive oil on hand and drizzle some on right before you serve.
