Smoked Meatloaf with Sweet Amber Fire

My smoker had been out of commission for two months, so as soon as I got it working again, this was the first thing I made! This is an easy recipe with only a few ingredients.
Ingredients:
1.5-2 lbs. of ground beef
1 small onion, diced (I caramelize mine, but that is optional)
1 cup bread crumbs or cracker crumbs
2 eggs
4 TBSP Sweet Amber Fire seasoning
Directions
- Mix all ingredients by hand and form into a loaf in a bread pan.
- Turn the bread pan over and remove meatloaf and place into your smoker at 275°.
- Smoke for about 2 hours, until internal temperature is just under 160°
- Add your favorite BBQ sauce (I use Sweet Baby Ray's) and cook until sauce is caramelized.
- Slice and enjoy!
If you have leftover slices (not likely in our household), they are perfect for frying up on the flat top or cast iron and making sandwiches.
