Sweet Amber Fire Crab Meat Cheese Ball

With March Madness upon us, I decided to try to come up with a couple of recipes that are easy to make and would be a hit at any National Championship party.  And yes, I realize these call for imitation crab meat, but real crab is expensive, y'all!

Ingredients:
1 pound imitation crab meat
1 onion, chopped
1 8 oz. block of cream cheese
1/3-1/2 cup of shredded cheddar cheese
1 TBSP of Sweet Amber Fire
2 TBSP of butter

Directions:

  • Start by caramelizing the onions in the butter. The key is to cook them low and slow, so they caramelize and don't fry. Cooking the onions add a different layer of flavor than raw onions.
  • When onions are done, remove them to a paper towel to drain off excess butter.
  • Transfer all ingredients to a large mixing bowl, and mix until everything is well combined.
  • Form into a ball and wrap in plastic wrap.
  • Put into the fridge to chill until ready to serve.

Serve this with crackers, pita chips.  If you don't want to form it into a ball, you could even leave it in a bowl and serve it as a dip with pretzels.
